The Vulcan VP18-1M3ZN is an 18 PAN NON-INSULATED HEATED HOLDING & PROOFING CABINET designed for professional kitchens. It features a heavy-duty 20-gauge polished stainless steel cabinet with a glass door, heavy-duty hinges, and gaskets for durability. Adjustable interior pan supports allow easy cleaning and accommodate up to eighteen 18″ x 26″ sheet pans or thirty-six 12″ x 20″ x 2¾” steam table pans. The cabinet includes a ½ gallon water pan for proofing, drip trough, and removable condensation pan for easy maintenance. With a top-mounted control panel featuring a fan on/off switch, adjustable thermostat (ambient to 190°F), and cabinet temperature thermometer, it offers precise temperature control. The 2,000 total watt heating elements ensure efficient heating, backed by a 10-year warranty.
