This fryer has an 80-pound open fry pot with an 18″ x 18″ x 4-3/8″ frying area.
Power
This high-production fryer uses a 240V, 3-phase electrical connection to provide 21 kw of power to the frypot for faster heat and recovery times than standard 17 kw models.

Controls
This configuration uses the Frymaster CM3.5 controller with smooth, touchpad surface. Its multi-product programmable controller automatically stretches cook time to provide consistent food quality regardless of the product load. LEDs display cooking time countdown (with audible alarm) and provide precise frypot temperature checks. The unit also features controlled boil-out at a steady 195°F (80°C), recovery “test time”, programmable “shake” and “hold” times and more.
